Astrophysical observations in the electromagnetic and in the gravitational wave band have opened a new window onto the most energetic phenomena of our Universe, and have allowed to test fundamental laws of Nature in extreme conditions. In this talk I will show how current and future facilities in both bands will shed new light on the holy grail of stellar astrophysics, i.e. the neutron star equation of state. I will discuss how measurement of masses, radii and tidal deformabilities from sources in different environments can provide crucial and complementary insights on the behavior of matter at supranuclear densities, and allow to distinguish among different microphysical models. Moreover, I will show how multi-messenger observations can improve this picture and lead to constrain properties of nucleon many-body interactions within stellar cores, which are beyond reach of terrestrial experiments.
